Ingredients

Plain wholemeal flour

¾ cup(s), (110g)

Plain flour

¾ cup(s), (110g)

Baking powder

2 tsp

Ground cinnamon

1½ tsp

Brown sugar

½ cup(s), (100g)

Egg(s)

2 medium, at room temperature

Olive oil

cup(s), (80ml)

Buttermilk

½ cup(s), (125ml)

Vanilla bean extract

1 tsp

Banana(s)

2 large, ripe, mashed

Instructions

  1. Preheat oven to 180°C. Spray a 22cm x 11cm (top measurement) loaf tin with oil. Line the base and 2 long sides with baking paper.
  2. Sift combined flour, baking powder and cinnamon into a bowl. Return the husks to the bowl. Stir in the sugar.
  3. Whisk together the eggs, oil, buttermilk and vanilla in a bowl. Stir in banana. Add the banana mixture to the flour mixture and stir until just combined.
  4. Spoon the mixture into the prepared tin and smooth the surface. Bake for 50 minutes or until golden and a skewer inserted into the centre comes out clean. Set aside in the tin for 5 minutes before turning onto a wire rack to cool completely.
