Ingredients

Baby potatoes

500 g, red, halved lengthways

Olive oil

1 tsp

Fennel

2 small, cut into wedges

Extra light sour cream

2 tbs

Garlic

2 clove(s)

Smoked paprika

1 tsp

Pork loin cutlet, raw

480 g, fat trimmed (Buy 4 x 150g)

Instructions

  1. Set air fryer to 200˚C. Toss potatoes with half the oil in a bowl. Season. Transfer to air fryer basket and insert basket in air fryer. Set timer for 8 minutes. Meanwhile, toss fennel and remaining oil in same bowl. Season. Toss potatoes and add fennel. Set timer for 12 minutes.
  2. Meanwhile, combine sour cream, garlic and paprika in a large bowl. Season. Add pork and turn to coat.
  3. Transfer roasted vegetables to a heatproof dish and cover with foil to keep warm. Arrange pork cutlets in basket, leaving a little gap between each. Insert basket and set timer for 7 minutes.
  4. Set cutlets aside, loosely covered with foil, to rest for 5 minutes. Return vegetables to air fryer and set timer for 3 minutes. Serve cutlets with roasted vegetables.

SERVING SUGGESTION: Steamed broccolini.
