A microwave silicone omelette maker can help you cook a range of both sweet and savory meals. Try our speedy apple upside-down pancake as a brunch or dessert idea for one.

Ingredients

Reduced fat oil spread

1 tsp

Apple(s)

½ medium, peeled, cored, cut into thin slices

Maple syrup

2 tsp

Ground cinnamon

½ tsp

Fresh dates

2 individual, roughly chopped

Rolled oats, dry

¼ cup(s), (25g)

Egg(s)

1 medium

Banana(s)

½ medium

White self-raising flour

1 tbs

No added sugar apple puree

¼ cup(s), (60ml)

99% fat-free, plain or natural yoghurt, unsweetened

2 tbs

Instructions

  1. Add spread, apple, syrup, cinnamon, dates and 1 tablespoon water to a microwave silicone omelette maker. Stir to coat apples. Microwave closed (70% power) for 2 minutes.
  2. Process oats, egg, banana, flour and apple puree in a food processor until well combined.
  3. Arrange apple mixture evenly over bottom of omelette maker. Pour over oat mixture to completely cover apples. Microwave, uncovered (70% power) for 4-5 minutes or until just cooked through. Set aside in omelette maker for 2 minutes before turning out onto a plate. Serve warm with yoghurt.
