Ingredients

Rolled barley flakes

45 g, (⅓ cup)

Ground cinnamon

¼ tsp, plus extra to serve

Apple(s)

1 small, unpeeled, cut into matchsticks

Instructions

  1. Place barley flakes and 1 cup (250ml) water in a small saucepan over medium-low heat. Cook, stirring, for 8–10 minutes or until mixture has thickened. Remove from heat and stir in cinnamon and ¾ of the apple.
  2. Serve topped with remaining apple and extra cinnamon.

Notes

Rolled barley flakes are made from whole or pearl barley that has been steamed, rolled and dried. Find them in the health-food section of some supermarkets or health-food stores. If unavailable, use traditional rolled oats.
