Ingredients

Red apple, peeled

3 medium, cut into 2cm pieces

Ground cinnamon

2 tsp

99% fat-free, plain or natural yoghurt, unsweetened

200 g

No added sugar apple puree

90 g

Low-fat custard

½ cup(s), (125g)

WW Apple Crumble Bar

Fresh mint

2 sprig(s), to garnish

Instructions

  1. Place apple & cinnamon into a small pot, stir to combine. Add ½ cup (125ml) water and cook covered on medium heat for 10 minutes. Reduce heat to low, uncover pot and cook for a further 5 minutes or until apples are just cooked. Set aside and allow to cool.
  2. To a bowl, add plain yoghurt, and apple purée, swirl to slightly combine.
  3. Divide half the cooked apple into glasses or mason jars, top with apple- yoghurt mixture, then layer with half the custard, then finish with a layer of apple.
  4. Chop the WW apple crumble bar and divide between each parfait, finish off with a garnish of mint.
