If you need a quick pizza fix, use pita bread as your crust; it crisps up quickly under the broiler and makes a great base for your pie. Herbed spreadable cheese serves double-duty, adding both the cheese base and lots of flavor from the garlic and herbs. This saves you the time and effort of chopping fresh herbs and garlic. You can certainly add more vegetables to the pizza. Roasted red peppers would be both a tasty and pretty addition. Or try some chopped fresh scallions for a little delicate fresh onion flavor.

Ingredients

Whole wheat pita

1 small

Garlic and herb reduced fat cheese spread

3 Tbsp

Cooked broccoli

¾ cup(s)

Sun-dried tomatoes (without oil)

1 Tbsp, finely chopped

Instructions

  1. Preheat broiler to High. Broil pita until toasted, about 1 minute per side. Over pita, spread cheese, then top with broccoli and tomatoes. Broil until broccoli is heated and cheese softens, about 1 minute.
  2. Serving size: 1 pizza
