Here's an easy, go-to meatloaf recipe you can put on repeat. We love it as is, but you can also turn up the heat by adding hot green chilies or chipotle peppers. Or swap the tomato sauce for your favorite hot salsa. This meatloaf freezes so well that we love making a double batch and stashing one in the freezer to have another night. If you are going to freeze the meatloaf, bake it for 60 minutes only. Cool, remove from pan, wrap in foil and freeze. A day before you're going to eat it, thaw the meatloaf in the refrigerator, and reheat it in oven at 350°F for 30 minutes. Top with 1/2 cup of tomato sauce and bake for 5 minutes more.

1 medium, finely chopped

Garlic powder

4 oz, mild or spicy

Canned tomato sauce

8 oz, divided

Instructions

  1. Preheat oven to 375°F. Coat a loaf pan with cooking spray.
  2. Combine all ingredients, except half of tomato sauce, in a large mixing bowl; set remaining tomato sauce aside. Spoon meatloaf mixture into prepared pan and smooth top.
  3. Bake for 60 minutes; spoon remaining sauce over meatloaf and cook 5 minutes more. Slice into eight pieces.
  4. Serving size: 1 slice
