While a classic grilled cheese sandwich is comforting and familiar, this one—loaded with garlicky roasted broccoli and silky roasted red peppers—is a serious step up in flavor. It's a great way to use up any leftover broccoli. Ultra-creamy harvarti cheese melts beautifully and adds mild nutty flavor, and pick up the cheese pre-sliced from the deli counter for ease; it can be tricky to thinly slice softer cheeses like havarti. You could also use Swiss or provolone cheese—or havarti with dill for even more flavor.

  1. Heat a small nonstick skillet over medium-low. Layer 1 bread slice with cheese, peppers, and broccoli; top with another bread slice. Coat both sides of sandwich with nonstick spray. Cook until bread is toasted and cheese melts, about 2½ minutes per side.
