Bursting with spring flavors, the mild, slightly sweet leeks and fresh mint add just enough flavor to the sweet green peas in this simple side dish that’s ready in about 30 minutes. When shopping for leeks, choose ones that have dark green and bright white colors that are free from yellowing. They are available year-round, but leeks are at their best from September through April. Bursting with refreshing flavor and fragrance, mint adds wonderful coolness to this dish. It’s versatile too. Add it to morning smoothies, sprinkle it on top of roasted chicken, or toss it with mixed greens in a salad or fresh fruit.

Ingredients

Olive oil

4 tsp

Uncooked leeks

3 medium, white part only, chopped and washed

Fat free chicken broth

1¼ cup(s), or vegetable broth, warmed, divided

Frozen green peas

4 cup(s), or fresh peas

Fresh lemon juice

1 Tbsp

Table salt

1 tsp

Fresh mint leaves

2 Tbsp, chopped

Instructions

  1. In a large sauté pan, heat oil over medium heat; add leeks and sauté for 5 minutes. Add 1/2 c broth; cook, stirring occasionally, until leeks are very soft, 5 minutes. Add 1/4 c more broth; reduce heat to low and deglaze pan by scraping up browned bits from bottom of pan. Stir leeks; remove pan from heat.
  2. Place peas and 1/4 c broth in a microwaveable bowl; microwave on HIGH until peas are tender, about 10 minutes. Remove and reserve 1 c peas.
  3. Coarsely mash remaining peas, adding up to remaining 1/4 c broth if too dry; stir in lemon juice, salt, leeks, reserved whole peas and mint.
  4. Serving size: 3/4 cup
