Spicy and smoky with a hint of sweet citrus, our jerk flavored yogurt dipping sauce makes and excellent accompaniment to the tasty charred flavor of grilled corn. The entire dish comes together in just over 20 minutes and the yogurt sauce can be made ahead. When purchasing corn on the cob, it's best to look for selections that have tight husks that are green and golden brown. Avoid choosing corn with dry, black tassels on the ends. You can grill the corn in under 10 minutes. Serve with grilled chicken or pork.

Ingredients

Corn on the cob

4 ear(s), medium, on the cob, husked and broken in half

Cooking spray

4 spray(s)

Jerk sauce

2 Tbsp, (or less to taste)

Fresh lime juice

1 Tbsp

Orange juice

1 Tbsp

Plain fat free Greek yogurt

½ Tbsp

Lime zest

1 tsp

Orange zest

1 tsp

Kosher salt

1 tsp

Chili powder

¼ tsp

Ground cumin

¼ tsp

Ground cinnamon

¼ tsp

Ground allspice

Instructions

  1. Preheat grill to medium-high.
  2. Spray corn with cooking spray; grill until charred and tender, rotating a few times, about 8 minutes.
  3. In a small mixing bowl, combine remaining ingredients. Brush jerk-yogurt sauce over cooked corn; serve.
  4. Serving size: 1/2 ear corn with about 1/2 Tbsp sauce
