Spiced Shrimp Burgers with Wasabi Slaw

Shrimp burgers are a fun change of pace from more typical beef or turkey patties. Just keep in mind that the patties have to chill at least 30 minutes or up to overnight, if you'd like to plan ahead. You'll also love the colorful, crunchy slaw that's served with the burgers. It features a fun dressing of mayonnaise, wasabi paste, lime juice, sesame oil, ginger, and garlic. Add more or less wasabi depending on your taste. The dressing can also be prepped a day ahead for even more convenience. Instead of hamburger buns, we call for whole-wheat pitas for easier handling and less calories.

Uncooked shrimp

1 pound(s), medium-size, peeled, deveined, patted dry

Red bell pepper

Dried plain breadcrumbs

Packaged coleslaw mix (shredded cabbage and carrots)

2 large, split in half

Instructions

  1. To make burgers, pulse shrimp in food processor until coarsely chopped (can also be done by hand).
  2. Combine 1/4 c red pepper through Sriracha in a large bowl; gently fold in shrimp until combined. Shape into four even 1/2-inch-thick patties; cover and chill for 30 minutes to overnight.
  3. To make slaw, combine 2 Tbsp mayonnaise and next 5 ingredients in a large bowl; keep chilled (may be made up to 1 day ahead). When ready to serve, combine mayo mixture with remaining ingredients (except pita).
  4. Off heat, coat a grill or grill pan with cooking spray; heat over medium heat. Grill burgers until firm and pink throughout, 8-9 minutes per side.
  5. To assemble burgers, place one burger in each pita half and fill with 1/3 cup slaw; garnish with cilantro and serve immediately.
