Move aside carrots! Courgettes are making a surge with this wonderfully tasty sweet treat. Invite your friends round for coffee and enjoy a slice on the side.

Ingredients

Courgette

250 g, grated

Low Fat Spread

75 g

Artificial sweetener

10 g

Orange

1 medium, juice & zest, plus pared zest for decorating

Egg, whole, raw

2 medium, raw

Wholemeal Flour

200 g, (use self raising)

Baking powder

½ teaspoon(s), level

Ground Cinnamon

½ teaspoon(s), level

Mixed Spice

½ teaspoon(s), level

Low Fat Soft Cheese

100 g

Icing Sugar

10 g

Instructions

  1. Preheat the oven to 180°C, fan 160°C, gas mark 4. Mist a 450g loaf tin with cooking spray and line with baking parchment.
  2. Squeeze the moisture out of the courgettes. Set aside. Beat the low fat spread with the sweetener, orange juice and zest, and eggs. Sift in the flour, baking powder and spices. Stir in the courgettes. Transfer to the tin, bake for 20–25 mins, then cool on a rack. Beat the cheese with the icing sugar. Spread over the cake and decorate with the orange zest.
