Ingredients

Calorie controlled cooking spray

Red onion

½ small, chopped

Garlic

1 clove(s), crushed

Cherry Tomatoes

200 g, halved

Hot Pepper Sauce (Tabasco)

¼ teaspoon(s)

Egg, whole, raw

4 large, raw

Semi Skimmed Milk

50 ml

Creamed horseradish sauce

½ tablespoon(s)

Salt

1 pinch, celery

Chives, Fresh

½ tablespoon(s), chopped

Instructions

  1. Mist a nonstick frying pan with cooking spray and cook the onion over a medium heat for 6-8 minutes until soft. Add the garlic clove and cook for 1 minute, then stir in the cherry tomatoes and Tabasco sauce. Season, then transfer to a plate and set aside.
  2. Whisk the eggs, milk and creamed horseradish together in a bowl and season well. Mist the pan with more cooking spray and pour in the egg mixture. Allow the eggs to set over the bottom of the pan, swirling to make sure the base is covered. Cook for 5 minutes until just set, then spoon the tomato mixture over one side of the omelette and fold the other side over.
  3. Remove from the pan and cut in half. Serve the omelette halves topped with a pinch of celery salt and chopped fresh chives.
