This was super easy and delicious. I was tempted to add some additional sausage, but resisted the urge and was glad I did. All of the flavors together don't let you miss the extra meet. I used a green and red pepper (the grocery store was out of yellow!) and it worked perfectly. I'd suggest cutting the peppers a bit smaller than just thin strips... they were a bit challenging to manage. But, otherwise, perfect as written, delicious, and filling.
