Ingredients

2 spray(s) cooking spray, or enough to coat skillet   
  1 medium uncooked onion(s), chopped   
1 clove(s) (medium) garlic clove(s), minced   
8 oz low-fat sausage(s), smoked variety, sliced 1/4-inch thick   
1/4 tsp dried thyme   
3/4 cup(s) canned chicken broth   
  30 oz canned great northern beans, rinsed and drained   
1 1/2 Tbsp canned tomato paste   
1/2 cup(s) dried plain breadcrumbs   

Instructions

  • Preheat broiler.

  • Coat a nonstick ovenproof skillet with cooking spray and heat. Add onion, garlic and kielbasa and sauté until onion is tender, about 3 to 4 minutes. Add thyme, broth, beans and tomato paste; simmer 10 minutes.

  • Sprinkle bread crumbs over beans. Place skillet under broiler until bread crumbs are browned, about 30 seconds. Yields about 1 3/4 cups per serving.

Like the others, I wanted to bump up the flavor. I used jalepeno chicken sausage and spicy diced tomatoes. I added another clove of garlic and sprinkled with parm cheese instead of bread crumbs. This is so easy and delicious. One pot shopping and minimal ingredients....my kind of meal.

I made this last night & it was a big hit! Based on reviews, I tweaked the recipe. I used 1 can of Ro-Tel tomatoes instead of paste; used 2 cloves of garlic; added 1/2 tsp italian seasoning; left the breadcrumbs out; and did Aidells cajun pork sausage (the whole pkg.) Rebuilt the recipe & it came out to 9 pts. Very filling & very flavorful. I will be making this again, but next time with chicken sausage to get lower pts.

My husband (not doing WW) selected this recipe to try; we both found it to be quite filling, but missing 'something'. Things we did different: used skillet on stove top, added a can of petite diced tomato (nixed the tomato paste), added some rosemary, did not use the breadcrumbs. It's not bad, but still, it needs something more.
