This is a great base recipe, but I like more vegetables. I modified the recipe by adding a chopped green bell pepper, a chopped onion and 6oz sliced button mushrooms. I also added some red pepper flakes and juice of half a lemon.
I used 1tsp of the olive oil to sauté the Veges and red pepper flakes, set them aside, then completed the rest of the recipe with the other tsp of olive oil and 1tbsp whipped butter. That adds 0.5 point per serving.
