I like this recipe, though I would add more spice next time. Also, I don't have a skillet, so wasn't so successful in browning the quinoa first. Also, it didn't absorbe all the liquid. Nevertheless, I will try it again.
This is a GREAT healthful recipe! It was quick and easy! Rinse the quinoa well. I added more spinach than the recipe called for. I also added a squeeze of lemon juice at the end for a little brightness.
This was a big hit with my non-WW friends. Tastes great days later too!
