Loved this dish - very tasty and filling!
So yummy. Never had quinoa before but will make again. I added salmon and kale (in place of the spinach) and lemon. Super easy way to get the veggies in. Topped with tomatoes just because its the season and I love them.
I like this recipe, though I would add more spice next time. Also, I don't have a skillet, so wasn't so successful in browning the quinoa first. Also, it didn't absorbe all the liquid. Nevertheless, I will try it again.
