Wow these turned out way better than expected. Needs more seasoning and herbs to ramp up that flavor and maybe a little cayenne pepper too. I am going to try with a curry mixture next time...
my family loves these. during summer when the zucchini is coming on fast and furious, we have these nearly every night. I also make them up and freeze on parchment paper. then I put a meals worth in a freezer bag for later. just thaw and bake.
